2 racks of pork spare ribs,
trimmed of fat and membranes |
| 3 tablespoons
dark brown sugar |
| 2
tablespoons Emeril's Essence® |
| 1
tablespoon salt |
| 1
tablespoon cumin |
| 1
tablespoon paprika |
| 1
tablespoon ground black pepper |
| 1
tablespoon cayenne |
| Your
favorite bar-b-que sauce |
1. Stir all of the dry
ingredients together in a mixing bowl until combined.
2. Rub the seasoning mixture all
over both sides of the racks of spare ribs, then wrap them in plastic wrap.
Place them on a baking sheet and refrigerate overnight.
3. Soak the wood chips of your
choice in water for 2-3 hours and drain.
4. Prepare your smoker according
to the manufacturer's instructions.
5. Unwrap the ribs, place them on
the grill of the smoker and cook for 1 1/2 hours, replacing coals as needed
during the cooking time.
6. Remove the ribs from the grill
and remove the smoker pan or box.
7. Return the ribs to the grill
and slather with bar-b-que sauce. Cook the ribs, turning and basting them once
until done, about 10-15 minutes.
