Jeri's Fruit Cake
Ingredients
| 2 lbs dates, coarsely
chopped |
1 tsp baking powder |
| 1 lb whole pecans |
1/2 cup dry red wine or
reserved cherry juice |
| 1 lb whole walnuts |
4 eggs (well beaten) |
| 1 large bottle of whole marichino
cherries (20 ozs.), drain and reserve juice |
1 tsp vanilla |
| 1/2 tsp salt |
3 Tbsp melted butter |
| 1 cup sugar |

| 2 cups flour |

- Sift dry ingredients over fruit and nuts.
- Beat together eggs, vanilla and wine (or cherry
juice).
- Pour over fruit and mix well.
- Add butter and toss until well blended.
- Press into loaf pan lined with wax paper.
- Bake for one hour at 325 degrees, or
until a toothpick inserted in the loaf comes out clean, not wet.
This is a mildly sweet, nutty delight that
complements a Mosby Sangiovese or Dolcetto.
